O ESPAÇO DA PRODUÇÃO E DA COMERCIALIZAÇÃO DO QUEIJO NO MUNICÍPIO DE CACHOEIRINHA – PE
Abstract
Este artigo lança um olhar sobre a pequena produção e comercialização do queijo no município de Cachoeirinha, situado na Microrregião do Vale do Ipojuca, no Agreste pernambucano. Neste trabalho, consideramos o processo de produção do queijo como atividade artesanal por apresentar aspectos relacionados ao período pré-industrial no qual havia uma predominância dos moldes artesanais de produção. Fundamentando-se nas idéias de Milton Santos sobre as “verticalidades e horizontalidades”, constatamos que as horizontalidades estão lá representadas pelos produtores rurais, onde a modernização e o cooperativismo ainda encontram resistências e as verticalidades estão simbolizadas pela cidade, que é o lugar da regulação do trabalho, onde acontece a circulação, distribuição e consumo dos produtos.Downloads
